Molienda : A mano

Destilado de cobre

Doble destilación

 

Cocción:

Horno cónico en la tierra y piedra de río.

Cinco días en el horno.

Leña de mezquite y encino.

El horno se tapa con zacate.

 

Fermentación:

Tinajas de madera, en la fermentación.

Sin contacto de aire.

Las tinajas se tapan con cobijas. 




Vete al quiote se elabora en la localidad de Nombre de Dios, Durango, la llamada “Tierra del Mezcal”, en los talleres familiares conocidos como vinatas. Su elaboración es todavía de tipo ancestral, utilizando especialmente el maguey gris silvestre, conocido comúnmente como “El Cenizo.”

 

Este Mezcal de elaboración ancestral, es obtenido del procesamiento del agave silvestre que se encuentra en los cerros semidesérticos del Valle del Guadiana.  Su fuerte sabor ahumado se suaviza combinándose con las notas de aguamiel al recorrer tu paladar.

 

Se recomienda su consumo con un buen queso fresco y unas gorditas placeras, de ser posible con los pies sumergidos en el agua fresca de un río.

 

Si preguntamos por el origen del mezcal, nuestros pies se ungen [o cubren] de la tierra Duranguense, donde orgullosamente es elaborado por sus maestras mezcaleras. Elaborada  gracias al uso de un alambique que consiste en un cazo de cobre con el mosto, bajo el cual hay un horno con leña de mezquite.

 

 

 

 

Vete al quiote es un Mezcal que une el fuego con la savia y la fibra del agave. Nacido del fuego y partido a mano, al hachazo, único sin tahona, deja  fluir la deliciosa miel y fibra de la piña cocida, yendo directamente a su destilación. Este proceso le otorga el toque dulce característico del quiote, con las melazas orgánicas que provienen del corazón de la planta, los cuales ayudan a generar un más alto porcentaje de alcohol.

Vete al Quiote is made in the town of Nombre de Dios, Durango, the so-called "land of Mezcal", in family workshops known as vinatas. Its production is still of the ancestral type, “called “ancestral” meaning it is made using the same instruments and technology of its creation hundreds of years ago.  

 

This ancestral elaboration relies on the “silvestre” or wild gray maguey, commonly known as "el Cenizo." Found in the semi-desert hills of the Guadiana Valley. Its strong smoky flavor is softened combining with the notes of the ‘aguamiel’ or mead like fermented sugars as it travels over your palate.

 

Its consumption is recommended with a good fresh cheese and some nice ‘gorditas’ or traditional regional Durango food, if possible, with the feet submerged in the natural flow of a river.

 

If we ask about the origin of this mezcal, we can trace it back to the feet- anointed by the Duranguense land, where it is proudly made by their female mezcal teachers. Using an arabic style alembic consisting of a copper saucepan with the wort or residual ash, under which there is an oven with mesquite wood- where the agave gets its name.

Vete al Quiote harkins back to the local treat for children of bagged cooked agave, or “quiote”! One that is born from the fusion of fire with the natural nectar and fiber of the agave. Born from fire and broken down by hand, with an ax, a process unique to the region that does not rely upon the Spanish stone wheel called tahona, it lets the delicious honey and grains of the cooked pineapple flow directly towards distillation. This process gives it the characteristic sweet touch, pure organic molasses that comes from the heart of the plant, which also helps to generate a higher percentage of alcohol.
